
Grandentato from il Vigneto dei Salumi is a unique tasting experience! It all started from the realization that, while processing Vinappeso, it often happened, in the early days, that the artisanal laboratory in Arbizzano di Negrar had to throw away the wine used in the aging of the salamis Giulietta or Isabella. But the artisan art quickly made itself felt, pushing Walter Ceradini and his collaborators to carry out new and surprising experiments using this particular mixture that many others would certainly have discarded. A mixture that is very different from the wine we are used to drinking, a rich nectar that preserves all the aromas and fragrances of aging, while maintaining the original aromatic and taste profile of the wine. A mixture that contains traces of salt, a characteristic by virtue of which it has been renamed Cristallino Wine. Cristallino Wine is the product of a unique processing in the world, a mixture that physically consists of Amarone and Recioto but, spiritually, of knowledge, love, and madness, that is, all those ways of being that guide and inspire the work of il Vigneto dei Salumi. An ingredient that takes the other products of the Vigneto dei Salumi line by the hand, creating something truly unique! The Grandentato presents a predominant aroma of licorice and a note of tobacco on the nose. On the palate, the initial hint of acidity is quickly replaced by savoriness and a structured melt-in-the-mouth texture. The Grandentato is obtained from the processing of the lean portion of selected heavy Italian pig cap, aged first for 40-50 days in Cristallino Wine and then aged for 4-5 months in the cellar.
