
Yellowfin Tuna Belly in olive oil 200 g The finest yellowfin tuna belly fillets, hand-selected and preserved in Sicilian olive oil. Tuna belly is the most prized part of the tuna. It is obtained from the fattest part of the fish, the one that surrounds the abdominal cavity: the muscle fibres are interwoven with fat, making the flesh softer and tastier. To create these tasty tuna belly fillets, the fish is taken from the cold store, cut into sections, bled in running water, placed in AISI 316 stainless steel baskets and cooked in water and salt at low temperature rather than steamed as in industrial production, in order to preserve its organoleptic qualities and prevent the loss of much of its protein. After cooking, the product is cooled and then manually skinned with great care and deboned. The cleaned sections are then cut into fillets and placed inside glass jars.
