Peel and cut the potatoes into chunks.
Parboil the potatoes in salted water until they become soft, then drain them.
Season the potatoes with salt, oil, pepper and aromatic herbs to taste.
Roll out the puff pastry in a baking tray and prick the base with a fork.
Arrange the slices of cheese on the base first, then the pancetta and finally the potato cubes.
Finish with a sprinkle of breadcrumbs and a drizzle of oil.
Bake at 180°C for 25-30 minutes, until golden brown.
