A vegan, healthy and gluten-free protein cookie, ideal as a post-workout snack or merienda. It is prepared in a few minutes with simple and nutritious ingredients.
In a bowl combine chufa flour, protein powder, baking powder and a pinch of salt.
Add the chufa cream and water, mixing until you obtain a compact, moldable mixture.
Shape a cookie with your hands and add the chopped chocolate on top.
Cook in the air fryer for 10 minutes or in a static oven at 180°C for about 10 minutes.
Let it cool slightly for a few minutes before enjoying it. Serve with chufa cream and chufa flakes.
