
Finocchiona "Il Poggetto" is the quintessential PGI Tuscan cured meat, produced according to the specifications of the Finocchiona PGI Consortium (EU Reg. 2015/629). The fennel seeds in the mixture give it the unmistakable aroma and flavor that make it recognizable among Tuscan cured meats. Preparation follows tradition: 100% Italian pork (shoulder and belly), medium grinding, hand processing, minimum curing of 21 days in our plant in Poggio a Caiano, Tuscany. Gluten-free. Lactose-free and without milk derivatives. Tuscan finocchiona is best when freshly sliced: the aroma of fennel seeds can be perceived from the very first cut.
