
Cultivation: Champagne Viellard-Millot is a family-owned business, now in its 6th generation, with vineyards close to the village of Ambonnay. The estate covers 2.23 ha, made up of 9 parcels, managed with reasoned viticulture practices and without the use of insecticides. Vinification and sparkling wine production are carried out at the Centre Vinicole d'Ambonnay, and all the cuvées produced bear the Grand Cru designation, ensuring extraordinary quality thanks to patience and respect for tradition. In the cellar: manual harvesting, pressing for 85% first-press juice (the cuvée) and 15% of the following press (the taille); vinification and aging in stainless steel before bottling, for the base vintage (2016; 60%) and for most of the reserve wine (15 vintages in "perpetual reserve", of which 10% is aged in barrel). Malolactic conversion completed and aging on lees in bottle for at least 48 months. Disgorgement is carried out at least 6 months before release. Yellow in color with golden highlights, the nose reveals toasted, biscuit and pastry notes, with hints of ripe grain. Chardonnay seems to dominate with its lovely freshness. On the palate it is rich and energetic, with a beautiful correspondence to the aromatic traits.
