
Dottati white figs from Cilento, harvested in the cool hours. Our figs are picked between late July and August, in the early morning hours, when the fruit is at its maximum ripeness and the aroma is still vibrant. They are Dottati white figs, a traditional variety with sweet and fragrant flesh. Only three ingredients. To make this jam we combine only figs, cane sugar, lemon juice, and the infusion of a vanilla to moderate the amount of lemon juice. This happens only during cooking for natural preservation. No pectin, no thickeners, no preservatives. The density comes from cooking and from the skins of the fig, not from additives. Low temperature vacuum cooking. We cook under vacuum at low temperature to preserve the color, fragrance, and structure of the fruit. It is a quick process that allows using less sugar and preserves the fragrance of freshly harvested figs, honoring our fruit as best as possible. Recognitions.
