We make pasta at an altitude of 700 m above sea level within 72 hours of milling the durum wheat to obtain the semolina; this guarantees all the organoleptic properties and aromas of our prized Italian wheats. The semolina is mixed with mountain water and then bronze-drawn. The slow drying phase, at low temperature in a static process for 12/36 hours, creates a rough and porous pasta as Italian tradition requires, capable of guaranteeing you the best cooking performance.
