An ancient variety, cultivated for centuries exclusively in a small area of Basilicata that includes the municipalities of Ferrandina, San Mauro Forte, Garaguso, Salandra and Craco, where centuries-old olive trees thrive in an unspoiled and ideal environment. The aromatic profile is typical of Majatica: light-medium fruity, with elegant notes of fresh grass, green apple and a delicate sweet almond. On the palate it is smooth and harmonious, with very restrained but persistent bitterness and pungency. This oil is made from olives harvested 2–4 weeks earlier than full ripeness, to obtain a product richer in polyphenols and green aromas.
