
A soft dessert, with a fluffy chocolate cake base and a delicious cheese cream and plenty of sour cherry compote on top!
Separate the yolks from the egg whites and whip the egg whites until stiff peaks form.
In a bowl, whisk the yolks with the sugar. Add the oil, water, sifted flour, baking powder and cocoa.
Finally, gently fold in the egg whites with a spatula.
Pour the mixture into a rectangular pizza pan lined with baking paper.
Prepare the cheese cream by mixing all the ingredients and blending until you obtain a soft and smooth cream.
Pour the cream by spoonfuls over the chocolate mixture.
Spread the sour cherry compote over the surface of the cake and use a toothpick to create a swirled effect.
Bake in a preheated fan oven at 160 degrees for 30 minutes.

If you do not have sour cherry compote, you can replace it with strawberries or raspberries. Great served as a dessert at the end of a meal.
