Peel the potatoes, wash them, cut them into cubes and boil them.
Once cool, mash them with a fork.
Add the potato starch, salt, pepper and paprika to taste.
Mix well and place the mixture in the fridge for half an hour to firm up.
Shape into balls and place them in the air fryer basket.
Spray with oil and cook at 200 degrees for 15 minutes, until the balls are nicely golden.

My advice? Triple the quantities and make lots of them... because they disappear in an instant!
