
A quick no-bake version of cheesecake served in a jar, lactose-free and egg-free. Crunchy layers of crushed rice cake, flavored lactose-free Greek yogurt or skyr, and strawberry light jam topping.


Crush the rice cakes and distribute them on the bottom of the jar to form the crunchy base.
Flavor the Greek yogurt or skyr with vanilla or a sprinkle of cinnamon to taste and pour a layer over the rice cake base.
Finish with a layer of strawberry marmel-light as topping.
Refrigerate for at least 30 minutes to set, or eat immediately.

Recipe suitable for those who are lactose intolerant and for those who avoid eggs. The amounts of rice cakes and jam can be adjusted to taste.
