Start by preparing a good ragout, in my case a vegetable one, so sauté carrots, celery, and onion, then make a vegetable ragout with crumbled fake meat burgers, herbs, and tomato sauce.
While it cooks, boil the spinach for one minute in salted water, drain it and rinse it with cold water, squeeze it well and chop it.
Add the ricotta and the vegan grated cheese, pepper, salt, and oil!
Clean and slice the potatoes with a mandoline and arrange them on parchment paper over the vegan grated cheese and a pinch of salt.
Fill your roll with spinach, stretchy cheese, and a little ragout in the center.
Close it like a candy wrapper with the parchment paper and bake at 180 degrees in a fan oven for 40 minutes. Wait a few minutes for it to cool and serve it!
