To prepare the avocado cream, start by removing the skin and pit from the fruit.
Then put the avocado pulp, onion, salt and the juice of half a lemon into a blender and blend everything until you obtain a cream, then set aside.
Meanwhile, roll out the puff pastry and use a 10 cm ring mold to cut out circles.
Then place the pastry circles in tartlet molds, creating edges as shown in the photo, and prick the bottom with a fork so that bubbles do not form during baking.
Bake at 180 degrees for about 20 minutes.
Once the baskets are baked, remove them from the oven, let them cool and then fill them generously with the avocado cream and garnish them with a slice of salmon rolled up into the shape of a rose.
Sprinkle a little lemon on the salmon as well and a drizzle of extra virgin olive oil.
Plate them on a serving dish together with some salad and serve.
