











In a bowl, combine the already cooked rice with the sautéed and chopped spinach.
Add the egg, parmesan, and a pinch of salt; mix well until obtaining a homogeneous mixture.
In a mold (or in two individual molds), place a layer of the rice mixture.
Distribute the sliced cheese in pieces over the layer of rice.
Cover with the rest of the mixture, level it off, and sprinkle with more parmesan on top; add a drizzle of oil.
Cook in an air fryer at 200°C for 15–20 minutes or in a preheated oven at 200°C for the same time, until obtaining a golden crust.
Remove from the oven, let it cool for a few minutes, and serve as a main dish or as a quick dinner.
