Wash the lentils under running water.
Boil the lentils with a bay leaf until cooked; drain and let them cool.
Wash the apple and cut it into slices or wedges.
Cut the tofu into cubes.
In a bowl, combine the cooled lentils, apple, and tofu.
Season with extra virgin olive oil, chopped parsley, and oregano to taste.
Mix well and serve.
