
Cream of peeled dried broad beans blended and served with Greek feta and grilled peppers. A butter-free, easy and quick recipe, suitable as an appetizer in single-serve cups, finger food, or as a main dish.
Wash the peeled dried broad beans and boil them in vegetable broth or water following the cooking times indicated on the package.
Meanwhile, wash the peppers and grill them; then peel them and set aside.
When the broad beans are cooked, sauté them in a pan with extra virgin olive oil and chopped shallot.
Blend the broad beans with a mixer until you obtain a smooth cream; season with salt and pepper.
Cut the feta into pieces.
Assemble the dish: spread the broad bean cream, add the grilled peppers and feta pieces.
Season with extra virgin olive oil, oregano, and pepper; serve with croutons.
