Dehulled spelt with fresh salmon is a light, tasty, and nutritious fish-based first course. A flavorful recipe without butter or cheese, also suitable for lactose-intolerant people. Good both hot and cold, and also great for lunch breaks.
Wash the salmon and roughly chop it.
Cook the salmon in a pan with the extra virgin olive oil and chopped parsley until it reaches the desired doneness.
Wash the dehulled spelt and cook it following the instructions on the package.
Once the spelt is cooked, add it to the salmon sauce in the pan.
Let everything flavor over high heat for a few minutes, adjusting with salt.
Serve hot or cold.
