In a blender, blend the tofu cubes, soy yogurt, oil, salt, and pepper until you obtain a creamy mixture.
In a pan, sauté the finely chopped onion with a drizzle of oil.
Add the peppers cut into strips and cook them for about 15-20 minutes. Adjust salt and pepper.
Meanwhile, bring the pasta water to a boil. When it boils, add the paccheri and cook for two minutes.
Drain the paccheri, reserving a little cooking water, and pour them into the pan with the peppers. Add the olives.
Pour in the tofu cream, adding a little cooking water to soften it, mix, and plate.
Serve with a side of seasonal vegetables.
