
Small ricotta cakelet, flourless and sugar-free, made with just three main ingredients. Ideal for breakfast or a snack. The original recipe also suggests lemon zest and, optionally, lactose-free / no-added-sugar “Delizia al limone” cream as an accompaniment.
Preheat the air fryer to 160°C.
In a bowl combine the ricotta, the egg, and the starch (or cornstarch). Add the grated lemon zest and mix until smooth.
Pour the mixture into a mold suitable for the air fryer.
Cook in the air fryer at 160°C for 25 minutes.
Let the cakelet cool completely before unmolding and serving.
Serve plain or with “Delizia al limone” cream if desired.

The recipe yields approximately 4 servings (depending on the size of the mold). The cream mentioned is optional and can be purchased as a lactose-free and no-added-sugar product.
