A vegetarian homemade version of the hot dog: sausages made from red beans, simple, quick and tasty. The original recipe uses few ingredients and suggests a double cooking method (air fryer and then pan with sauces).
In a bowl, blend or mash the well-rinsed red beans until smooth.
Add the rice flour, the water and, if desired, paprika and salt. Mix until you get a moldable mixture; adjust the consistency by adding a little water if needed.
Shape two "sausages" with the mixture, forming them with your hands.
First cooking: cook the sausages in the air fryer at 200°C for about 13 minutes.
To rehydrate and flavor: in a hot pan, pour in the favorite sauces (e.g. BeeBeeQ and Salsa Rosa Sriracha) mixed with a little water (about 70 g), or use only water; add the sausages and cook over high heat for 4-5 minutes, until the water is absorbed and the sausages are soft and juicy.
Slice the hot dog bun, fill it with sautéed greens or lettuce, add the sausage and a slice of Cheddar. Serve hot.
