
A simple and quick orange cake featured on Instagram: a moist cake flavored with orange, suitable for a snack. The author also suggests cooking it in an air fryer as an alternative to the oven.
Preheat the oven to 170°C fan (alternatively, set the air fryer to 170°C for the first phase).
Wash the organic orange well and, if indicated in the original preparation, grate the zest and squeeze the juice (here the whole orange is used: adapt according to preference).
In a bowl, beat the eggs with the sugar (or erythritol) until foamy.
Add the honey and extra virgin olive oil, mixing well.
Add the flour and potato starch sifted together with the baking powder and fold into the mixture until you obtain a smooth batter.
Add the orange (pulp and/or juice and zest) to the batter and mix to distribute it well.
Pour the batter into a cake pan lined with baking paper or buttered and floured.
Bake in a fan oven at 170°C for about 40 minutes, checking doneness with a skewer.
Air fryer alternative: cook at 170°C for 15 minutes, then lower to 160°C and cook for another 15 minutes; check with a skewer.
Let cool before unmolding and serving.
