Blend all the ingredients except the breadcrumbs until you obtain a smooth mixture.
Place the mixture over the breadcrumbs and shape 6 cutlets.
Cook the cutlets in an air fryer at 200° for 12 minutes, turning them after 8 minutes.
Add a drizzle of extra virgin olive oil before serving.
